Cauliflower Tofu

Ingredients
- ½ pound of tofu
- ¾ pound of cauliflower, cut in bite sized pieces
- 1 carrot, thinly sliced
- 4 shiitake mushrooms
- 2 cups of water
- 1 tablespoon tamari sauce
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon fresh chopped coriander
- Black pepper
- Celtic Sea Salt
Instructions
- Soak the mushrooms in a little hot water, then quarter them and save the soaking water. Boil 2 cups fresh water and add the cauliflower. Boil until pieces are tender and drain. Tofu can be deep fried or cut into bite sized pieces and stir-fried with the rest of the ingredients. Heat the frying pan at high heat and add oil. Add tofu, cauliflower, carrots, mushrooms and their soaking liquid, tamari, and yeast. Stir-fry for 5 minutes. Garnish with coriander, black pepper and salt with rice noodles.
