Baked Fish with Chutney

Ingredients
- 4 fish fillets
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 1 cup of extra-virgin olive oil
- 1 tablespoon lemon juice
- 1 onion, finely chopped
- ½ teaspoon minced garlic
- ½ teaspoon grated ginger
- 2 tablespoons vegan butter
- 2 tablespoons chopped coriander
- ½ teaspoon chopped parsley
- Celtic Sea Salt
- Chutney
Instructions
- Season fish with spices and cook in oil for about 40 seconds on each side. Sprinkle with lemon juice. Place in an oven dish. Brown the onion, garlic and ginger in the vegan butter. Add the coriander, mix well. Spread over the fish. Spread the chutney evenly over the fish and cook at 350 degrees for about 15 minutes.
